Ingredients:
1.5 kg carrot
1/3 cup Oil
3tbsp Honey
5tbsp Sugar/Splenda
1 cup Dry milk powder
4 pods Cardamom( take seeds and grind them)
Method:
Grate carrots and put them in pan that has tight lid. Turn heat to medium high for about a minute so that pan gets heated up. Reduce heat to lowest and cover that pan.
Let these carrots cook until they are very tender and begin to loose their shape. It may take about 1 -2 hours. Make sure to stir carrots after every 15-20 minutes otherwise they will burn.
When carrots are cooked remove lid and turn heat to medium , there may be still some water in it. Let that water dry completely while stirring continuously in order to avoid burning.
When water is all dried up add oil and keep stirring. Cook it for another 10 minutes at least. Add honey give it a good mix then add splenda/sugar and cardamom powder. Make sure honey, splenda and cardamom are well mixed in carrots. Now add dry milk powder, sprinkle it all over don’t make a pile. Mix milk powder properly there should not be any big dry lumps of milk but only tiny ones.
After adding milk only cook for minute or two. Add any nuts if want you to and dish out, ENJOY.
