3 ½ cup Whole Wheat flour
3 tbsp Oil
3 tbsp Honey
¼ cup Milk
1 cup + 2 tbsp Hot water
1 tsp salt
2 ¼ tsp yeast
Method:
Put hot water ( hot enough that you can put your finger in without burning) in a bowl add honey, oil, salt, milk and yeast. Mix this mixture together and leave for about 5 -10 minutes. You will see a foaming layer on top, that mean yeast is working. If you don’t see that it means yeast is old and will not work . You might want to discard this and start with some fresh yeast.
Now start to add flour to this yeast mixture slowly starting with one cup at a time , mix it well and add another cup. Keep adding flour till dough pulls out from the sides. Take out dough on the slightly floured surface and start kneading. You need to knead the dough for at least 5-10 minutes so it is smooth and build some elasticity. Use flour or water as needed while kneading the dough keeping in mind that dough should be soft and tacky. Now make a ball of the dough and place in a well oiled bowl and cover with wet cloth. Leave it for about two hours or until it gets double in size. Time will vary depending upon room temperature. When it reaches the double size take it out on counter and knead again for minute or two. Now shape it in form of a loaf and place in well oiled loaf pan. Brush some oil on the top surface. Take a plastic wrap and loosely cover the pan and leave it to rise. After about an hour or so when it reaches in double size again place it in preheated oven at 175C degree on middle rack. Bake it for 30-35 minutes. If top springs back on pressing gently and tabbing on the bottom produce a hollow sounds that means bread is ready. Take out of the oven and let cool. Make sure to let it cool completely before slicing. Enjoy fresh healthy homemade bread right from your own kitchen.
